WINEMAKING
The two varieties, Malagousia and Assyrtiko, are planted in the same vineyard, harvested and fermented together. This helps to integrate the fresh typical acidity of the Assyrtiko and the full aroma of the Malagousia resulting in a perfect marriage of aroma and fresh balanced acidity. After the fermentation the wine is kept for four months on the yeast lees.
