THE PROCESS
Our family run, boutique winery is located in Northern Greece, in the well-known wine region of Epanomi. Domaine Florian is the result of a long family tradition in viticulture and winemaking. Our goal has always been to produce authentic wines with their own character, boasting all the strengths of each vintage and showcasing the diverse grape variety. For our red wines and barriques, we built an underground cellar with natural clay floor covered in marble split in order to provide perfect humidity and steady temperatures for the oak casks. Stabilisation and fining of the wine is done by natural means; mainly, temperature drop and egg white, full fermentation of existing fruit sugars and lowest possible use of sulphites. Fermentation is considered complete when it naturally stops. We do not use enzymes, wood chips, concentrate grape juices or any other means of artificial taste additives. Filtration of wines is kept to a minimum as to maintain the richness and spectrum of all flavours in each bottle.

In order to financially sustain the ethos of our family business and to ensure year-round work for our employees, the farm also produces exquisite olive oils, honey and Greek aromatic plants, such as oregano, lavender and thyme. Upon appointment, you are invited to participate in seasonal harvesting, and you are welcome to simply visit our wine tasting bar and get a tour of the farm.
